Chinese Sweet and Sour Cucumber Salad Recipe

  • Yield: 3-4 servings

Ingredients

  • 1 Large Cucumber
  • 1-1/2 tbsp minced garlic
  • 1 tbsp salt
  • 1-1/2 tbsp sugar
  • 5 tbsp white vinegar
  • 1/2 tsp sesame seed oil 
  • 1/2 tsp chili powder (optional)
  • 1/2 tsp peppercorn chili oil (optional)

Directions

  1. Soak cucumber in a bowl of water with some baking soda. (My mom said it helps getting the pesticide out).
  2. Peel and slice cucumber.
  3. In a bowl, add cucumber, garlic, sugar. Mix thoroughly. Then add the rest of the ingredients. Mix well.
  4. Serve immediately or Refrigerate for 30 minutes before serving.
