Chinese Sweet and Sour Cucumber Salad Recipe

Ingredients
- 1 Large Cucumber
- 1-1/2 tbsp minced garlic
- 1 tbsp salt
- 1-1/2 tbsp sugar
- 5 tbsp white vinegar
- 1/2 tsp sesame seed oil
- 1/2 tsp chili powder (optional)
- 1/2 tsp peppercorn chili oil (optional)
Directions
- Soak cucumber in a bowl of water with some baking soda. (My mom said it helps getting the pesticide out).
- Peel and slice cucumber.
- In a bowl, add cucumber, garlic, sugar. Mix thoroughly. Then add the rest of the ingredients. Mix well.
- Serve immediately or Refrigerate for 30 minutes before serving.
